Sumatra Mandheling coffee is named after the Mandailing people who inhabit northern Sumatra, Indonesia's largest island. This island is home to a wide range of tropical flora, fauna and microclimates that help produce rich and distinctive coffee flavors unique to this region where 60-70% of the country’s coffee is produced. Farms on Sumatra are typically one half to 2.5 hectares scattered across remote regions. Our Sumatra Mandheling coffee beans come from smallholders in the Aceh province. where rich soil and high altitudes make up an ideal environment for growing Arabica coffee.
The wet-hulled coffee process is the method of choice in Indonesia due to the humid climate. This process has become synonymous with Indonesian coffees and contributes to its unique cup profile. In the wet-hulled process, coffee cherries are generally depulped at the farm level using hand-cranked machines. The cherries are then fermented overnight to help break down the mucilage, which is subsequently washed off. Afterwards, the coffee is quick-dried to 30-50% moisture and then sent to the mill for further drying until it reaches between 11%-13% moisture content. The dried coffee is then sorted for export.
Green coffee from Sumatra is classified into different grades depending on the number of defects present in an unroasted coffee sample of 300 grams. We provide the highest, Grade 1 TP, signifying that the coffee was triple-picked (TP), referring to how many times the beans were hand-sorted, and less than five defects were found per sample.
This bean is more challenging to roast due to its density from the wet-hulled processing method, but we have found the taste amazing as it lets the flavors settle in nicely. Try a cup today!
